Mexican Supper

  • 1 cup sour cream
  • 2 cups water
  • 3 cups instant mashed potato flakes
  • 1 pound ground beef
  • 1 15-ounce can tomato sauce with chunks
  • ½ cup cheddar cheese, shredded
  • 1 can corn with sweet peppers, unstrained
  • 1 tablespoon dehydrated minced onion
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1/8 teaspoon oregano
Mix sour cream, water and potato flakes in 9x9 pan. Brown meat in skillet. Add remaining ingredients except cheese. Spread over potato mixture. Top with cheese and bake in preheated 350 degree oven for 20-25 minutes.
6 to 8 servings.
