Lemon Jello Cake

  • 1 package yellow cake mix
  • 1 3-ounce package lemon jello
  • 3 eggs
  • ½ cup oil
  • 1¼ cups water
Mix all ingredients together. Beat until smooth. Pour into 9x13 prepared pan. Bake at 350 degrees for 35-40 minutes. When done pierce cake all over with fork.

Icing:

  • 1½ cups powdered sugar
  • ¼ cup lemon juice
Mix together until smooth. Pour icing over cake immediately when taken from oven, spreading evenly over top. Cake will stay moist at least a week. Keep covered. Great for RVing!
